Black Bean Stir Fry

Just a quick, little post here.  This is one of my fav recipes as its (a) very tasty, (b) very quick and easy to make, and (c) decently healthy.  With some simple modifications, it can be super healthy, but I will leave that up to you!

Ingredients

  • 1 lb. Top Sirloin, thinly sliced or 1 lb. Chicken breast, cubed (or even Tofu)
  • 4 tbsp Black Beans
  • 4 Garlic cloves, minced
  • 2 tbsp Soy Sauce (low sodium, of course)
  • 2 tsp Sugar
  • 2 tsp Corn Starch
  • 2 tbsp Peanut Oil
  • Vegetables (add as much as you desire…): Red, Yellow, Orange, or Green Bell Pepper, chopped; Snow Peas, whole; Broccoli crowns; and Carrots, sliced in discs (I LOVE adding copious amounts of veggies as they taste great and its an awesome way to sneak a TON of veggies into the mouths of my kids!)
  • 1 tsp Sesame Oil
  • Cashews or Peanuts
  • Brown Rice (or Quinoa)

Instructions

  1. Cut Beef into thin slices; Cube Chicken
  2. Drain, rinse and mash Black Beans and combine with garlic
  3. Combine Soy Sauce, Sugar, Cornstarch, and 1/2 Cup Water; set aside
  4. Heat Peanut Oil and lightly cook meat, approx. 3-5 minutes
  5. Add bean mixture and cook for an additional 3-5 minutes
  6. Add soy mixture, bring to boil, and cook until desired thickness, stirring occasionally
  7. Sprinkle with Sesame Oil
  8. (If desired to soften) Microwave veggies for 2 minutes
  9. Add veggies to mixture and cook until veggies are of desired tenderness
  10. Remove from heat, add nuts, toss, and serve over rice or quinoa.
