My Healthy Recipe for a Quick and Easy Salad
Just a quick post about a yummy healthy salad I recently made for dinner for my family. I wanted to share the recipe for my salad because it was (a) healthy, (b) easy, and (c) yummy! (Oh, as an aside, I allowed my daughter to select the border color for my couple of images. Yeah, the pink.)
Given that I always want to eat healthy and want to teach my kids how to eat healthy even more, I knew I’d be making some healthy salad. Getting kids to eat fruits and vegetables is often like, well, doing rocket science while riding an ostrich. You know, kinda tough. Any chance to incorporate healthy foods and I jump at it.
In all candor, I am not really sure this counts as a recipe, but since it is healthy and this is what I did, I am calling it a healthy recipe! You can easily tinker with it to add/subtract whatever sounds good to you and yours.
Healthy Salad Ingredients
- 1 lb. Ground Turkey, browned
- 1/2 Packet Taco Seasoning (low sodium)
- 1 Avocado, cut into small cubes
- Mixed Greens
- 1 Red Pepper, chopped
- 1 Yellow Pepper, chopped
- 1 Orange Pepper, chopped
- Carrots
- Fresh Salsa
Making the Salad
Ready for this…??? Mix it all together! Seriously. That’s it. Ok, here’s the “specifics”:
1. Brown the Ground Turkey and add Taco Seasoning, according to directions, when ready.
2. Mix all remaining ingredients together. The fresh salsa replaces any need for salad dressing, as those are almost always unhealthy. Plus, I enjoy the taste of raw vegetables and want to teach my kids to enjoy them as well.
3. Be creative and add anything else that you think would taste yummy and healthy! 🙂
4. Serve and enjoy. My healthy recipe made about 4-5 servings, with no leftovers.
