Black Bean Stir Fry
Just a quick, little post here. This is one of my fav recipes as its (a) very tasty, (b) very quick and easy to make, and (c) decently healthy. With some simple modifications, it can be super healthy, but I will leave that up to you! Ingredients 1 lb. Top Sirloin, thinly sliced or 1 lb. Chicken breast, cubed (or even Tofu) 4 tbsp Black Beans 4 Garlic cloves, minced 2 tbsp Soy Sauce (low sodium, of course) 2 tsp Sugar 2 tsp Corn Starch 2 tbsp Peanut Oil Vegetables (add as much as you desire…): Red, Yellow, Orange, or Green Bell...

What started as nothing more than curiosity (or, perhaps, insanity) became a passion. I wish I could say that I knew I would love this sport or that I had always been “into running” but none of that is true. I registered for and completed my very first triathlon (an off-road) on a complete whim and, merely one month later, registered for Ironman Arizona even though I had no experience, had never ridden a road/tri bike, and had no clue what I was really doing. (You can read the whole story HERE, if you like.) Fast forwarding to...

As with every race, I had certain goals, some more reachable than others. As with every race as well, I hit some goals and missed others… A bit of background about the Mountain Man Sprint first. The Mountain Man Sprint (and Olympic in August) are the 5th oldest races west of the Mississippi river. They take place in Flagstaff, Arizona and are spectacular events. The air is generally cool and pleasant. The swim, taking place in Upper Lake Mary, is awesome. Water temperatures for the past eight years have been exactly 71...

Given that it’s summertime in the desert, anything I can do to trick my mind into thinking it is pleasant and cool is something I need. I find it challenging to motivate to cook in the summer. Whether its the heat of the oven or stove, both of which seem to heat my whole house, or the death that is standing next to a grill, I just can’t find adequate drive to cook healthy. But, I can’t simply eat either processed garbage or carry-out for every meal. So, with that in mind, I am always seeking cool, easy, yet healthy recipes. ...

This will be the first of a few blogs about the 2011 Beachbody Summit. The Summit took place June 16-19, in Los Angeles. I will do a fully summary later, but I wanted to write specifically about the initial General Session and one of the presentations. As anyone who knows me is aware, I love being a Beachbody Coach. I love their products, whether P90X, Insanity, Shakeology, or Hip Hop Abs (no matter how ridiculous I look doing that last one!) Having been a Coach for over three years, I have watched the company, particularly the Coaching...

A question I get asked with some regularity is whether weights or bands are better. My response is generally that it depends, which I recognize is not much of an answer. Each system has its pros and cons. Whatever your preferences though and to address everyones’ initial concern: both are effective and will yield results. You can get incredible results with either. In 2008, I did three, full 90-day cycles of P90X. I did the first 90-day cycle using solely resistance bands, the second using solely weights, and the third using whichever...

People frequently ask me what I am doing to my kids. They hear that I make this “vegetable shake” for my kids and assume it is some kind of torture or punishment. So, as a way to educate a few and hopefully alleviate peoples’ concern for the well-being of my children, I thought a little background and information would be in order. The Creation It all started about two years ago, in a land known as my kitchen. At that time, my wonderful, and yet rather stubborn, daughter Amelia was making the leap from bottles to baby food. ...

Amazing how life always does not match expectations. Looking at prior finishing times from Boise, I believed I would be competitive enough in my age group to legitimately pursue a spot at the Half-Iron World Championship. Given a noon start (instead of the typical 7:00am), I thought that would make the morning a little more tolerable than normal. Considering that the swim takes place in a fresh water, beautiful lake, I assumed I would have a sub-30 minutes swim. After reviewing the elevation map of the bike course, I thought it would...

That’s right, a Shakeology Sample. Why, you might wonder? Because I am such a believer that I know you will be too if you give Shakeology a legitimate try. I’ve been using it for over a year now and am officially either addicted or in love with it. Not sure which and it might be both! I was not always so passionate about it though. When Shakeology debuted, I was definitely a doubter at best. I mistakenly thought it was just another protein shake or fruit smoothie. Just another example of why you should try things before issues...

What is P90X? Maybe the baddest, most awesomest program even created. If P90X is not Number 1, it certainly is in the discussion. P90X is, in short, an extreme fitness program, created by fitness trainer Tony Horton, and designed to get people in the best shape of their lives. With P90X, you get: Twelve Fitness DVDs (Chest and Back; Plyometrics; Shoulders and Arms; Kenpo X; Core Synergistics; Legs and Back; Yoga X; Chest, Shoulders, and Triceps; Cardio X; Back and Biceps; X Stretch; and Ab Ripper X), A “How to Bring It” DVD...
